Matcha Cookies

Ingredients (8–10 cookies)

  • 1 cup all-purpose flour
  • 1 tbsp Sokai matcha
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup coconut oil (melted) or butter
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 egg (or flax egg: 1 tbsp flaxseed + 2.5 tbsp water)
  • 1 tsp vanilla extract
  • Optional: white chocolate chips or chopped pistachios

Instructions

  1. Ground yourself.
    You’re not just baking—you’re creating something warm and real.
  2. Preheat oven to 175°C (350°F). Line a tray with parchment paper.
  3. In a bowl, whisk flour, matcha, baking soda, and salt.
  4. In another bowl, mix melted coconut oil, sugar, egg, and vanilla until smooth.
  5. Combine wet and dry mixtures. Stir until fully blended.
    Add white chocolate chips or pistachios if using.
  6. Scoop dough into small balls. Flatten slightly. Place on tray.
  7. Bake for 9–11 minutes or until edges are just set.
    The center stays soft—don’t overbake.
  8. Cool for 10 minutes.
    Let the sweetness settle.

Notes

  • Best enjoyed with silence or soft music.
  • Can be stored 3–4 days in an airtight container.
